However, I’ve found some easy breakfast recipes that are simple and fun for all to make! What’s more, they are packed with plenty of healthy nutrients to fuel your energy and keep you going for the day.

1. Single Serving Blueberry Muffin
Have a sweet tooth and always craving for desserts no matter what time of the day it is, but worry about it being too heavy and sweet for an early breakfast? Don’t worry, this vegan, low fat and high fiber blueberry muffin will make the perfect solution!

2. Easy Strawberry Banana Smoothie
Ahhh, wouldn’t you just love to indulge in a fresh and cold cup of smoothie in this hot sweltering weather? Funny thing is, even though we Singaporeans have grown up in this hot tropical climate since young, we just can’t seem to get use to it. Forgo that coffee or milo for once, and give this healthier and fuss-free alternative a try! It might also help to cool you down and make you more refreshed for the long day ahead.

- 2 cups of Frozen Strawberries

Before you start thinking “Isn’t this supposed to be a fast and simple recipe for breakfast? Why does it take 6 hours to make?”, I have to clarify that it includes leaving the jar of oats overnight in your fridge, and the time taken to prepare and mix in all the ingredients beforehand would just take you less than 20 minutes! It makes the process even faster when you are only 5 ingredients away from making this delicious and wholesome recipe. Trust me, it will make your morning breakfast routine alot simpler!

- 1/2 cup of Unsweetened Plain Almond Milk (120ml)
- 3/4 tbs of Chia Seeds
- 2 tbs of Natural Salted Peanut Butter/ Almond Butter (32g)
- 1 tbs of Maple Syrup/ Coconut Sugar/ Organic Brown Sugar/ Stevia (15ml)
- 1/2 cup of gluten-free rolled oats (45g)

4. Honey Lime Quinoa Fruit Salad
I don’t know about you, but I’m a huge fan of fresh fruits – especially berries! This would make an absolute perfect breakfast for all the fruit-lovers out there. I just can’t emphasise enough on the benefits of eating fruits. They are naturally low in fat and calories and provide many essential nutrients and vitamins such as vitamin C and dietary fiber that are needed for our daily healthy consumption.

- 1 cup of Uncooked Quinoa
- 1 1/2 cup of Strawberries (diced)
- 1 cup of Blackberries
- 1 cup of Blueberries
- 1 Mango (diced)
- Honey Lime Glaze

- 1 tbs of Chopped Basil (for garnish)

But one thing for sure is that this is a classic comfort food that is simple and enough to fill our tummies for the day. Just slather on the goodness of avocado and your toast is good to go!
